Thanksgiving Day 2011

Hope you all had a great Thanksgiving!

We sure did....we had a great one with the family and lots of yummy food.


We had a very busy day followed by a busy weekend.

I haven’t had time to sit down and go through all of my pictures until now.

Thursday morning we got up bright and early.

I had to cook for two Thanksgivings so I was busy cooking all morning.

We always watch the Macy's Thanksgiving parade in the morning or at least have it on while we are cooking and getting dressed.

We went to Adam’s parents for lunch.

We enjoyed a good lunch and played a few games and visited for a while.






Ace loved Uno Attack...he thought it was the funniest thing when cards came flying out.  It was to funny!








We then went straight to my parents and spent the rest of the day with them.

It was Lillie's 1st Thanksgiving!







Heather started a new tradition with the kids and got them some Christmas pj's.

They were all really excited to see her walk in with a gift.

I thought that was a neat idea.

I love Christmas pj's!







I love the Holidays and look forward to Christmas!

Yummy Crock-Pot Chicken Tortilla Soup


Happy Monday!

Hope you all had a great Thanksgiving!

This is one of my newest recipes that came about during an experiment. It is now my FAVORITE thing to make because it is so easy, simple, and delicious.

Place 3 or 4 chicken breast in a crock-pot and cover with your favorite jar of salsa. Depending on how much time you have, cook your chicken on high for 4 hours or low for 6 to 8 hours.

About an hour before the chicken is finished, I take some forks to it and shred all of it to let it soak up all the juices. You'll be able to tell if the chicken is ready by the way it shreds. It should shred with no problems or trouble.


An hour later, pop open your cans, pour them in, and give it a little stir....

1 can rotel with green chili's
1 can Swanson's Chicken Broth
2 cans condensed Cream of Chicken soup
2 cans Southwestern Corn
1 can of water
I always add some Cumin, Ground Red Pepper, and a little salt and pepper. {I don't measure these, just sprinkle to your hearts content}


I let that cook on high until it's all blended together well, and bubbling a little, then it's eatin time!


I like to add cheese, avocado, and some tortilla strips to my soup.


For the tortilla strips, you could just break up a few tortilla chips OR you could make your own. I use a pizza wheel to cut 1 to 2 tortillas in small strips and then bake them on 350 until crispy and golden brown.


 One of my crock pot secrets are crock-pot liners. They make cleaning that huge bowl so super easy! So be sure to place your liner in the crock-pot before your chicken. When you are done cooking, simply throw the liner away and put your crock-pot up!

Randoms

I know it's only Wednesday but we have a busy weekend so I thought I would do my randoms from the week early.

I have been wanting to put up my tree for the past two weeks but haven't got to it.   Last night I took all of my fall decor down.  So, I am hoping to get all my Christmas stuff up next week.

And the good thing is I actually have gifts that I will be able to put under it. I am ahead of myself this year. Ha!

We are thinking about buying a new tree this year.  We have had the same tree for 10 years. It is one that you have to put each branch on and it is kind of a pain to put up.  But I love it because it is so big and full.

But it would be really nice to have a pre-lit one.




Heather is way ahead of me.  She has all her Christmas decor up!




For Thanksgiving I am in charge of the sweet potatoes and green bean casserole. Those are two things I can make well.

So, I make them for each of our Thanksgivings we go to.

I also usually make some kind of dessert.

 




While we were at Target last Saturday I picked up this.  So, I now have a Missoni for Target piece.  It was on sale and I couldn't pass it up.

 It looks very fallish. 






Look what I found at Target for little Miss.  Isn't this the cutest??

I wish they had it in my size!





So, all I have been seeing lately on the internet are the infinity scarves.  While we were at Ross a couple of weeks ago I found two and they were $6.

I love them and wear them a lot.





Last night we went over to Adam's parent to celebrate his Dads birthday.

His dad is 63 years young. 


We had dinner over there and some yummy cake!

Our First Thanksgiving

Sunday, we had our first Thanksgiving with my Dad's family.


It was our first Holiday with out our grandmother so it was kind of bitter sweet.  I so wish last Thanksgiving wasn't her last one with us.  We all missed her Sunday.

I look forward to many more Holiday's with my family.  I know that she would want us to keep the tradition going and keep coming together as a family on all Holidays.

It was kind of like she was there with us.

Our sister in law has her recipe for her pecan pie and brought two pies. The pecan pie was great!


Our cousin has her recipe for her homemade mac and cheese and she is now the queen of making her mac and cheese.

She actually took over the making of it a couple of years ago. As a kid mac and cheese was her favorite so...she is now in charge of it.


My dad is now making her stuffing and dressing.

It's nice to see that her recipes are still in the family.


Not sure what was wrong with me on Sunday...but I didn't get to many pictures.  I think between visiting with family, watching Aydrie, and chasing Ace around...I forgot to take pics. Ha!


We all enjoyed visiting and eating some good food.  The weather was nice for the most part, we were able to sit outside for a while.  It started to rain and a cold front came through at the end of the day. 






We had another great Thanksgiving and I look forward to the others.

It's Monday!

Happy Monday!

Gosh this weekend just flew by but that is okay because it is a short week for me, Thanksgiving on Thursday, followed by a long fun weekend of shopping with my mom and sister.

I hope Aunt Jaye is ready for us!


Saturday, I received a text from Heather at 7:30 am telling me she was going to run and do some shopping.  She had to be home by 12:00 so she was gong to get up and go and I had an hour to get ready.

I had just got finished given Ace a bottle and he was going back to sleep. (Yes, Ace is one and still takes a bottle...don't judge. Ha!)  I thought really hard about laying back down with him but decided to get up and go with Heather.

I don't know how I managed but I got us all ready in an hour.

That was the first time that has happened. 


(I hate how my flash on my phone makes their eyes glow all the time.)


Heather got to my house with Starbucks in hand...which was much needed.

 
We made our way to Target and actually did some Christmas shopping and we may have bought some things for us too. Ha! 

I found a cute jacket that I so wished I had gotten.  I think Heather ended up getting her one...so I am def. going to have to go back and get it.

These two were very good while we were shopping.

Ace was being so loud.  He "talks" so much.

Heather swears he can say her name.  I think he just does it on accident. LOL



We did so good on time we actually made it back to my house before 12:00.



I spent the afternoon at my parents painting my mantle my dad finished in 2 days!!

It looks so good. I can't wait to get it in my house!



Austin spent sometime with my dad going through some stuff in the barn.  My Dad is trying to make more room in his work shop and was cleaning some stuff out.


Austin had fun going through and looking at all the stuff. 


His great grandfather was a very organized person and labeled all these cabinets so he could keep up with all his stuff.

I thought it was so neat to see his handwriting and they way he kept all his stuff. I really don't remember seeing this kind of stuff when he was alive but then again I probably wasn't paying attention.

We had fun opening the labeled drawers and finding the stuff inside.


He past away nearly 10 years ago and all his stuff is still in his drawers. 

He had a drawer for everything from fishing...light bulbs...gardening gloves...screws....car wash....tractor....wire....paint brushes....sand paper...I could go on in on.  Ha!

I wish I would have gotten a picture of his canning cabinet...with all his jars he used for his canning.  I will have to snap a picture of it next time I am there before they clean it out.

We had a very fun, busy, and productive day!
